Forks over Knives is a documentary that traces the journeys of two men, Dr T. Colin Campbell, a nutritional biochemist and Dr Caldwell Esselstyn a former surgeon. This film was inspired by the remarkable discoveries they have made through their research. This research led them to conclude that degenerative diseases like heart disease, type two diabetes, and even several forms of cancer could be prevented and in many cases be reversed by adopting a whole-foods, plant based diet.

The 96 minute DVD examines food as medicine, following real patients with chronic conditions, such as heart disease and diabetes, the observer is treated to the challenges and triumphs of their journeys whilst adopting a plant based diet. Well worth a watch, the film utilises research from the China Study, amongst others and makes it relevant to everyday life. If you do not have time to read the China Study, then watch this film

My favorite part of the documentary, actually, is the explanation for why whole foods (ideally plants, but not necessarily) are so vastly better for us than processed foods. It’s an easy-to-follow, intuitive argument about how processed food takes advantage of our ancient, innate drive to consume fatty and sweet foods because, in nature, these qualities are signals of high caloric density. And foods rich in calories, of course, were essential to our species’ survival when food was scarce.
