Healthy baked Onion Bhajis; I had these last night for dinner; seriously easy, quick and nutritious. perfect accompaniment to a curry or salad.

Combine these ingredients in a bowl;

https://www.facebook.com/images/emoji.php/v9/f69/1/16/1f331.png4 diced onions
https://www.facebook.com/images/emoji.php/v9/f69/1/16/1f331.png1 tablespoon cumin
https://www.facebook.com/images/emoji.php/v9/f69/1/16/1f331.pngsmall handful of fresh coriander
https://www.facebook.com/images/emoji.php/v9/f69/1/16/1f331.pngsalt & pepper
https://www.facebook.com/images/emoji.php/v9/f69/1/16/1f331.png1 teaspoon coconut oil
https://www.facebook.com/images/emoji.php/v9/f69/1/16/1f331.png20-30g milled flaxseed (optional)
https://www.facebook.com/images/emoji.php/v9/f69/1/16/1f331.pngWater (as required)

Mix ingredients and add splashes of water as required to create consistency. Mould balls and bake for 30 mins @ 180. I give them a spray with frylight before putting them in the oven. Bon appetit!

These sound great and look simple to make, with some side salad and a yogurt and cucumber dip they would be great as a light lunch.

They are wonderful and incredibly easy to make, you can impress your guests with your homemade cooking too. They’ll think you slaved for hours.

I just love knowing that all the foods are healthy and give something back to you rather than deplete you of health.

These have given me a great idea for Christmas food in the work place. At a time when everyone brings in varying amounts of rubbish food, and consequently put on pounds of weight over the festive season, this will show people that it is possible to have healthy, low fat food that is tasty and can still remain party food.

I add 1/2 teaspoon of mixed spice, this adds depth to the flavour.

You can find it in any South Asian grocery shop.

Most supermarkets sell it, also known as Gram flour, many decent supermarkets have an Asian cooking section, or, as Dahlia suggests, try a South Asian shop, plus it will support the small business :thumb

When I make mine, I feel they are missing the spice that I normally taste from my Indian restaurant. Any ideas for some recommendations? I don’t want heat, just depth of flavour.


Also any recipes for the yogurt dip that is very often served with these? :ne_nau:

Greek yogurt,
grated ginger,
Mint leaves - ideally fresh
Coriander leaves - ideally fresh
Cucumber grated and squeezed.
You can add a touch of lime too, but only a touch!

Quantities to your own taste.
